Spicy LEMON-LIME Fried CRAPPIE

This recipe can be made for one serving or for as many fish fillets as you want to cook. It is lightly spicy and crunchy with a definite citrus “twang”.

Rinse fish fillets and dry on paper towel. Place the fillets in a flat-bottomed dish and barely cover the tops with some of the Zesty Lime Vinaigrette Dressing. Turn the fish fillets in the dressing to fully coat both sides of the fillets; then allow the fillets to marinate for about 10 to 15 minutes.

While the fish fillets are marinating, shake some of the Louisiana Fish Fry mix into a large Ziploc bag. After the marinating time, place the fish fillets (one at a time) into the Ziploc bag, carefully seal the bag, and shake to coat the fish fillet.

Pour enough vegetable oil for frying into a heavy skillet and heat to high, but not smoking. When the oil is heated, add the fish fillets, one at a time; then reduce heat to between high and medium-high to cook until browned on both sides and crispy. Drain on paper towel. Serve warm.
