Vern’s Cooking & Tidbits: Crushed and Crusty Crappie

Origin of Corn Flakes
Corn Flakes, believe it or not, were invented as part of an Anti-Sexual Crusade in the 18th and 19th centuries. Michigan physician John Harvey Kellogg was uncomfortable about sex because he thought thinking about it was harmful physically, emotionally and spiritually. He personally abstained.
The good news for us was that Kellogg created a few different flaked grain breakfast cereals, including Corn Flakes, that were healthy, ready-to-eat, morning meals. Later, he and his brother Will made cereals to sell. Will was more interested in business than diet and began selling cereals through his own business that became the Kellogg Company.

Corn Flake and Patato Chip Crust Crappie
1/3 cup of buttermilk
1/8 teaspoon pepper
4 ounces potato chips, crushed
3/4 cup Corn Flakes, crushed
1/4 teaspoon paprika
1 1/2 pounds of crappie fillets at least 1/2 inch thick

Mix buttermilk and pepper in a pie pan. On a separate plate mix crushed potato chips, crushed Corn Flakes, and paprika on plate or waxed paper. Preheat oven to 550 degrees to broil. Grease broiler pan. Cut fish into serving pieces. Dip in buttermilk mixture. Coat with potato chip & Corn Flake mixture. Place on broiler pan. Broil 6 inches from heat for 3 minutes per side, or until fish flakes easily.

Banana Pudding
For dessert let’s slice up some bananas puddled in pudding for a simple taste treat.
1 large box vanilla or banana pudding mix (sugar-free or not)
Vanilla Wafers
Bananas

Place wafers and banana slices in alternating layers in Pyrex dish. Mix pudding mix. Pour over layers of wafers and banana slices and chill.
