BROILED CRAPPIE w/ SAVORY ORANGE HONEY SAUCE

may20161 lb. crappie fillets; washed, drained, and patted dry

Salt

Freshly ground black pepper

1 T. lemon juice

1 T. orange marmalade

2 tsp. honey

2 tsp. Dijon mustard

1 tsp. soy sauce

1 T. fresh orange juice

1/8 tsp. salt

2 green onions, sliced thin including some of the tender green tops

Place an oven rack on the top rung of the broiler and preheat the broiler to 500 degrees.  Lightly salt and pepper both sides of the fish fillets, and then sprinkle with the lemon juice; set aside.

Spray-oil a measuring cup or small bowl, add the orange marmalade, honey, mustard, soy sauce, orange juice, salt, and green onions.  Stir very well to blend.

Spray-oil a 9” x 13” glass baking dish and arrange the fish fillets in a single layer. Spoon one-half of the sauce on the fish fillets.  Broil on 500 degrees for 5 minutes.

Carefully remove the hot dish, turn the fish fillets over, and spoon the remaining sauce on the opposite side of the fish fillets.  Return the dish to the broiler for 4 to 5 minutes or until the fish flakes using a fork and it is lightly browned.

Serves: 3 to 4.
