1 lb. crappie fillets
Salt
Freshly ground black pepper
1 cup pecans, crushed
1 cup unseasoned breadcrumbs
½ cup grated Parmesan cheese
Thin slices of butter
Lemon wedges, optional
Preheat oven to 350 degrees.
Wash and pat dry the fish fillets.
Spray-oil a baking dish. Sprinkle both sides of the fish filets with salt and pepper; then arrange the fish fillets in the dish.
In a small bowl, mix the crushed pecans, breadcrumbs, and Parmesan cheese.
Sprinkle the tops of the fish filets with the crumb mixture and place butter slices on top.
Bake, uncovered, at 350 degrees until the fish is done. Fish cooks quickly. It is cooked when the fish color changes from translucent to white, and the fish is flaky when lifted with a fork.
Serve with lemon wedges to squeeze over the fish fillets, if desired.
